Jailbreak is the process of unlocking a system so it runs unauthorized software.

The ps3 has a system that only allows games that are bought legitimately on the store or online.
If you unlock the software (jailbreak) you can copy a game from a friend; download from the web and play on your ps3 without paying for it.

Jailbreak ps3 is to play copied or downloaded games on a ps3 (run unaothorized software).

@Marksel: Jailbreaking has nothing to do with piracy. Many people should know that in context of iPhone/iPod where this gets done to run third party code which is not directly authorized by apple (appstore). It is a legitimate process and just removes the restriction some manufacturer have put on their product.
